Nick remembered saying ILY and viewers know he said it. Adalind will get another chance to hear it for the first time so it doesn't really matter that everything was reversed since we know they are together after twenty years.
Nick and Adalind's relationship isn't smooth sailing from the moment they both realise they've entertained thoughts of kissing one another, nor are their feelings free to bloom unhindered without any drama once things intensify. They didn't openly trust one another and then there was BC to deal with. And only between that and Zerstörer is their relationship even deserving to be called that but the show was drowning in WotW episodes and they didn't leave room for showing Nick and Adalind as a normal couple beyond the perfunctory until the big ILY scene and Nick desperately wanting Adalind back after she died in his arms.
They simply didn't have screen time dedicated to exploring their budding relationship. We saw them struggle in S5 and that eroded away off screen in S6.
