Nick and Adalind were clearly going to have a lot of fun in Blind Love until everyone but Rosalee had their drinks spiked. It looked like they were having fun for the entire time prior to that and they probably had fun after that as well. All of the fun just got interrupted similar to how Nick and Juliette's weekend getaway got derailed in season 1.
I really don't like discussing things when it concerns shipping so I'll just discuss what I saw. There were some funny moments between Nick and Adalind even though they were brief. They looked pretty happy when Nick told her he thought he would go crazy without her. There was also the scene where Adalind was standing beside him as he was about to shave but she made that quip about him looking good with a bit of stubble.
The final few episodes were about Zerstorer which included Juliette going into the mirror world and what part Diana played in this whole thing. Diana being in danger was going to prevent them from having any fun and they weren't going to have a moment's peace until they got Juliette back and Zerstorer was dealt with once and for all.
As far as season 5 goes, they weren't really in a relationship and had to adjust to their new reality. I think Renard informed Adalind about Diana not too long after Nick returned from Germany so that would make it difficult for any fun to take place because she couldn't take her mind off Diana.
As Rpmaluki said, Nick's relationships with Adalind and Juliette were completely different with a completely different with a circumstances. Them having a child together alone would cause a lot of differences without considering their history.
Ultimately, Nick once loved Juliette and she loved him back but he now loves Adalind's and it's reciprocated. Some people may find it difficult to imagine them having fun in the next 20 years but I find it harder to believe they didn't since the epilogue was clearly intended to show a very happy ending.
