Awww, I think folks are being too hard on Josh. Yeah, he isn't a kick ass fighter, but then most of us "normal" humans aren't. And let's face it, there is something about being a Grimm that lends a certain mental resilience/toughness that us mere mortals can't match. Or maybe it's detachment, I dunno. Really when you think about it, to an outsider, Grimms look like the worst serial killers evah!
Let's look at Josh's situation in detail. In a matter of just a few weeks (months? not really sure about the timeline) he's found out his Dad is terminally ill. Had said terminally ill Dad completely loose the plot (or so it seems to him) and insist on taking a cross country quest driven by a bunch of family heirlooms that include books of drawings that look like something out of a bad trip. At the end of that trip he's been attacked in his hotel room, watched his Dad skewer the attacker and been forced into hiding. Then he finds out that his Dad isn't really loosing the plot and said drawings aren't fulled by drugs, but are in fact of real beings that he can't see! His Dad dies and then he finds out about this "key" and a bit of it's mystery and how a whole bunch of these beings that he still can't see want this thing and are willing to do anything to get it. So he hands it over to Nick thinking that's it and aside from the warning that he still could be become a Grimm, goes home back to his safe little world, carrying his father's ashes.
Now finally back at home he discovers he really isn't safe and he still can't see the bad guys. BTW, if those doofuses hadn't done such a sloppy search, he'd never have known they were there and they'd have had him. So he manages to get away (not in efficiently, but still effective) and calls the one person he feels he can count on. And what does this one person do? Basically tells him he's on his own. Seriously. Nick just tells him to get somewhere safe? Yeah, how's he going to figure that out?
So he hops a bus for another cross country trip (BTW, how long would it actually take for a bus to get from Pennsylvania to Portland? I think this one found a wormhole or something) and he has the whole trip to worry/stew about his situation, all the while wondering who around him might be a wesen wanting to get him. So he gets to Nick's and (in his eyes) first thing that happens is Theresa attacks him. Jeeze, it's a wonder the guy isn't curled up in the fetal position under a bed or something.
I think Josh is there to give us more of an outsider's take on the world of being a Grimm. And it's another way to emphasize the value of a Grimm.

You'll be happy to know that while there is another subject I'd love to discuss, I see it's under spoiler tags and as I have no idea how to use those, I'll have to pass.
Hope so! I just don't want this to drag on or for Wu to end up on the wrong side of things 'cause they've left him in the dark for so long. I don't mind if he's pissed at them for keeping him in the dark though. A pissy/snarky Wu would be fun

Even though Wu doesn't understand everything that's happening, he at least got reaffirmation that Nick isn't on the side of the long-tongued monsters. That's got to restore some of his trust.
