Seeing a character writing in a diary several times makes me assume, that he regulary writes a diary, as simple as that. All else wouldn't make much sense.
And besides, wasting minutes for that every episode would not only be tiring, but wasted time imo.
As i see it, he illustrated every single encounter in those books (of course most of them off-screen), that brought new information worth adding, as that is the most logical assumption.
Plus, it only makes sense to add something to the books, that hasn't already been written down, for instance a new way of killing that wesen, etc.
