I'm not sure I would say Nick is prejudiced against Hexenbiests (e.g. as being Wesen). He's just had NO good experiences with Hexenbiests. None, unlike Blutbads and Fuschbau. Hexenbiests tried to kill his aunt, him, harmed Juliette, bespelled Juliette, were not helpful in solving cases, are cheapskates (scaring Rosalee into lowering prices), etc. The actual Grimm Wiki description of a Hexenbiest isn't particularly flattering so who would blame anyone for having negative feelings about them. Same with Verrat...if someone has that tattoo, I would think the Scooby gang would be prejudice against them based on their actions and not what they look like.
And if you're going to call Nick prejudice...remember all the times Monroe has said something about another Wesen like "don't want to run into one of those" or "if you see one, kill it" or "those things are nasty." Another example is like saying someone is prejudiced because they don't like gang members if by definition that gang has some "pretty bad dudes (dudettes)" in it that have caused trouble in their community.
At this point, it is up to Hexenbiests (including Juliette) to PROVE TO Nick they are trustworthy, just as he as a Grimm has had to prove himself to the Wesen community repeatedly. Talk about prejudices. Every single Wesen in the free world is prejudice against Grimms. Even Monroe said he was raised with stories about Grimms that depicted them as the bogeyman....and it was because of their actions; they take heads.
I have a feeling that having three Grimms in one town is going to make a lot of situations very tense because Nick is the first and only Grimm who asks questions first. Neither TRubel nor Kelly trust many people or Wesen so they often throw punches first. So....let the fireworks commence!
IMO, everyone has a type of person that they have a bad reaction to (someone mentioned Neo-Nazis as an example of a type of person they are prejudice against on the boards once).
Growing up, raised in a ghetto I saw a lot of negative stereotypes. The main one that was engrained on me was that probably 80-90% of of men of Hispanic decent I ran across thought they needed to prove they were men by psychologically or physically harming others. This attitude made me sick and, for years, even after I left the ghetto I was weary of every Hispanic man I met. I knew logically that someones race was not an indicator of their personality but still it in my mind. I believe it was my responsibility to re-educate/deprogram that reaction, and I have... Took years of work, but I have.
My hope is that the writers treat this in a similar way and don't have Juliette's personality change in some way but instead have Nick be forced to realize that she is Juliette no matter what other traits she has.
