Yes, I saw it again, and you are right that he didn't mention cousins. But just because he didn't mention them, doesn't mean they aren't there.
I do think that it would be nice if a couple of seasons down the line a young cousin moves to Portland for college and his Grimm abilities emerge; Nick will have a chance to be the mentor this time and introduce him/her to their heritage. This might be something the writers might do if the actor playing one of the regular/semiregular characters has to leave.
