I would have liked to see something of their beginning as well. We sort of started the story with seven already existing Grimms who'd broken away from serving the seven Royal families when they took the mysterious artifact found at the sacking of Constantinople and hid it from their former "employers" (?)
The show never delved into why hexenbiests and zauberbiests were humanoid in their woged state compared to all the other wesen who looked like animals.
There is mythology still to be explored and I'd love it if NBC took a chance and expanded on the show. It doesn't need to follow Nick with his friends and family at all.
