I always thought Juliette took the potion out of fear. Not for herself, but for Monroe, Rosalee, and Nick. Juliette still cared about all these people at the time and Nick not being a Grimm wasn't going to make their lives normal anyway. They would've had to change their identities and move far away to have any hope for that but could they truly stay away if their friends were in trouble?
The danger Monroe and Rosalee were in always gets all the focus but Juliette also overheard Bud warning Trubel about a Wesen saying he was going to murder Nick now that he knew he wasn't a Grimm anymore. Juliette had told Monroe and Rosalee to hold off finding a cure so she and Nick could live a normal life. I assume that includes safety. Juliette had to realize at that moment that Nick was in even more danger not being a Grimm. She had to feel like Nick was going to die unless he became a Grimm again. The wesen weren't going to go away just because Nick wasn't a Grimm anymore.
