Interesting point. According to the story line, the 7 grimm knights found the hidden whatever during the 4th crusade in the early 13th century. If Monroe was correct when he said the map on the keys was from a style used in the 15th century, then that's when the keys would have been made as well.
So, whatever the keys lead to may well have been hidden/kept somewhere else for a couple of centuries and was moved to the Black Forest by the descendents of the grimm knights.
A tie in with some of Monroe's ancestors is possible. Especially, since in those days professions were not as narrowly focused as in modern times. Any craftsman who did intricate work could be called on to do all different kinds of intricate work.
