Just from what I know of the Knights Templar, their duty was to protect the human element in the Holy Land. They were given riches in return for the protection and along the way, it's been speculated that they acquired relics, such parts of the True Cross and Holy Grail, maybe even the Ark of the Covenant as part of their treasure. King Phillip was among the first to order their arrest in an attempt to gain at least part of their treasure for himself. Even though he succeeded in arresting some of them, it's been speculated that some escaped and went to other countries with their treasure.
There is (or was) a televison series that detailed efforts to find the Templar treasure, which was speculated to be hidden on Oak Island near Nova Scotia. I understand a few things have been found but I don't think the treasure itself has been located.
The grimm knights were supposed to be Templars, so it's more likely that they obtained the shard and hid it away until they could obtain the rest of the staff. Nick's intent to go to Germany and get the treasure seems to follow this pattern, and that's why grimm blood could take the place of the two remaining keys.
The dopey thing about all of this of course, is how easily Nick found the treasure. He's not the sharpest crayon in the box and since he found the treasure, it seems to indicate these Templar grimms were none too bright.
Oak Island is surrounded by water and when digs occur they are often immediately flooded, making it impossible to locate any treasure. A hideaway like this is consistent with how the Templars would store their treasure. According to one documentary I watched they were brilliant engineers. And despite King Phillips efforts to secure the treasure, he didn't find any of it.
