Me think I remember Todd Milliner never mentioned that his idea was based on a cop, he imagined the mysterious Grimm as a warrior of fairytale-monsters. Also Dave Greenwalt and Jim Kouf, when they started working on that project, wasn't sure about the background. It came from NBC, they wanted the lead to be a cop - and so it was created with Nick as a cop. And that makes sense for me.
For Marie, she was a librarian, Nick told that during the Pilot, and I think also Farley mentioned something about books in 1.13 (but here I could be wrong, a little spoiled because of reading too much fanfics ). About Kelly, we don't know IF she was working at all. I could imagine that she stayed at home to raise Nick (and do her Grimm-work at night), while Reed had a job. We simply don't know, as that was never really mentioned during the show so far - and from what I learn from the writers, they also don't plan anything to enlighten Nick's childhood.
I could imagine from what Farley told Nick, Nick also told about his years with Marie, and also the fact that Kelly (IF Kelly is Kelly) and Marie didn't seem too close, that there was a breaking point BEFORE the crash. It doesn't look like there was much of contact back then, as Nick didn't know about Farley or Marie engaged to someone at all. Okay, he also didn't remember Gina, which, according to Kelly, was in the crashed car together with Reed.
We know Marie began to run after she began to raise Nick. Together they travelled the whole country and at least then she also worked as librarian. There are different theories why she ran and how she managed to keep this all from Nick.
I don't know why but after seeing Marie in the Pilot and Kelly during 2.01 my guess is there was a sort of breaking point where Marie stopped killing Wesen. We know from Kelly that Nick's grandfather took both sisters on Wesen-hunts when they were still teens (just turned 18). Such a reputation as Marie owned within the Wesen-world is fast build and could at least be from that time. Or, IF Kelly is Kelly, maybe she used Maries ID for her own business while she was after the killers. I could imagine it was a mixture of both, Marie tired of being the Bad Girl (especially with her falling in love WITH a Wesen) and later Kelly using her name to fake her own death. Question still is: why Marie started to run? When and from whom came the key? It couldn't be no longer about the coins, and Marie lived later in Montana under her own name (Renard during 2.12. The trailer was still listed under Marie's name). So, it wasn't too difficult for Wesen to go after her - if she had the key and the Royals knew about it.
My guess is still, there's something wrong with Nick and that is why Marie packed her and her nephew's belongings and started to travel US until Nick left her (maybe for collage? I think he needed a degree for being accepted at the academy, right?). Otherwise the assassins only had to wait for Marie's death to get the key, or until she was in chemo or something. Unless she hid the key that good that no one could have find it without her. This 18 years still give me a hard time ...
