Nick had already decided he wanted to become a grimm again over a normal life. He confided that to Monroe earler but never told Juliette of his decision. And while that doesn't mean much to you, in my opinion, it's a great big deception on his part.
Even when Juliette saw that Monroe and Rosalee were in danger, and stated Nick needed to be a grimm again, he still had time to be honest with her. He could have told her then that he'd already made the decision to become a grimm again. Instead he led her to believe it was her idea and "if she wanted it, then he wanted it too".
If Nick had been honest with her, then I would agree with you. But he was not. As a result, the shit was heading toward the fan well before Juliette ever showed signs of being a hexenbiest. It just didn't surface until the hexenbiest did.
