Juliette throws the jar up in the air and uses her powers to make the jar float.
Rosalee tells her, "No, Juliette! It's all **we've got!**"
It's at that point that Rosalee lunges toward Juliette and tries to grab the jar. Juliette telekinetically throws her.
The jar is still floating, and the contents were still safe at that point. Juliette then lets the jar fall to the ground and break.

She can't. The only way she can get the jar is to lunge toward Juliette.
Since the Rosalee's lunge occurs first, Juliette could have interpreted that as an aggressive action, and why not? She had no reason to trust the scoobies.

Why is Rosalee so focused on retrieving something that she had willingly handed over to Juliette? The potion is of no use to her. So what if it's all they have? Rosalee wouldn't be saving it for posterity if Juliette refused to take it. So what would be the point of Rosalee risking serious injury at Juliette's hands unless her plan was to force Juliette to take the potion.
Rosalee could be figuring that if Juliette's attention was focused on her and she managed to catch the jar, that could buy Nick and company enough time to restrain Juliette.
The best way to frustrate a cyberbully is to ignore him.
