I got the impression Trubel carried the knife because she was constantly attacked growing up. It's like when Juliette wanted to get a gun after the home invasion and her kidnapping but that was only two instances while Trubel was attacked a lot more than twice based off her saying they usually call her a Grimm right before attacking her. It was clearly not the first time she heard that word despite not knowing what it meant.
Unlike Josh, Trubel could see the monsters. Grimms also appeared to have an innate ability to defend themselves. Once she learned about being a Grimm and got training she didn't fear wesen like she used to and found a purpose. Trubel felt she could do more good going off with Josh and later joining HW.
In addition, Trubel wasn't a basket case but the attacks did take their toll on her. She was visibly shaken in the episode she was introduced.
