Nothing beats my grandfather, back in the days in Italy. There was this locally made cheese. When you sliced into it, all these tiny worms would be jumping out with many more residing in the solid pieces, then watching him chase the squirming things on his plate with a piece of bread and chase it down with home made wine. He would tell me, hey, they live in the cheese, they eat only the cheese, they taste the same as the cheese. I did not indulge!!!
My roots are from outside Napels. This is as close as I can find of the same type of cheese he would eat.
