Honestly, I don't know if the writers thought too much about it.
Nick started off season 5 trying to raise Adalind's self esteem and learn to work together to raise Kelly and that went well. When she said that she loved him, he could have bought up that they really do not know each other as non-parents and if they want to go that route that they should start dating. That time could have been used to talk about issues like her becoming a Hexenbiest or Diana better and so helping to prevent their communication issues. When you are new parents, it is a lot work for people for who have known each other for years. It is no surprise these two had communication issues.
Women characters do not have to be having sex with the lead to be important to the story.
