That's right. Juliette only became a hexenbiest due to the reverse spell.
Hexenbiest "grew" in Juliette over time and she had no signs of it when she looked like Adalind. Nick became a woged zauberbiest right away likely because he is a grimm and they have some enhanced abilities at all times. Nick's special hearing is at all times. Interestingly, the scooby team said that all the books claimed any spells done on a grimm would kill the grimm. I believe this is the first time it was mentioned that Nick might be very different from other grimms. Did I miss anything?
Women characters do not have to be having sex with the lead to be important to the story.
