Yes, the show is called Grimm, but it could also have been called "Wesen" or "Wogue". "Grimm" just happens to sound cooler.
Calling Adalind a "secondhand villain thrown in" on the other hand isn't even remotely close to accurate.
As Nick pointed out, she was his first woge, which also made her our first woge as an audience.
Adalind is also: the mother of Nick's child, Renard's ex, Renard's ex's daughter, the mother of Renard's daughter, the woman who tried to kill Nick's aunt, the woman who stole Nick's powers, the woman's whose powers were stolen by Nick, the woman responsible for Juliette becoming a hexenbiest, the woman who tried to save Juliette from life as a hexenbiest, the one who helped frame Kenneth, possibly Meisner's love interest, possibly Nick's soulmate, and a whole lot more.
You may not like Adalind, but she is a HUGE part of this show.
