I've been thinking... and I'm back with my first theory: Schnittmacher - reaper. The reapers appear civilized and handsome, but it's only false front, isn't it? Once alone with a Grimm they are savage enough. It even works with customers (the Hässlich in "Leave it to beavers").
My main point: Nick doesn't ask "What's a Schnietmaker?", neither in the first scene nor in the second. He keeps asking when introduced to a new Wesen, but with Schnietmachers, he doesn't. He knows reapers well enough.
