Kelly trusted Juliette with her life because G&K had two problems. First, Mary Elizabeth Mastrantonio was not available to play the character. Second, Juliette was not popular with viewers.
The scene you quoted has dialog between Hank and Nick that G&K hoped would establish that Kelly absolutely trusted Juliette. That is not consistent with Kelly who had learned not to trust anyone. So your question is valid. The real Kelly would have smelled a rat and turned the Royal/Verrat ambush into a slaughter of Kenneth, Hexenette and the Verrat assassins.
Altering Kelly to a gullible Grimm got MEM killed and off the show. Note that MEM was not actually in the murder scene. Making her gullible allowed Hexenette to betray her.
Hexenette's betrayal lured Kelly into the ambush. Her presence in Nick's house and close relations with Kenneth including their fornication in Nick's bed just prior to the murder establish her as an accomplice to the murder and decapitation of Kelly. These vile acts turned the Juliette character from unpopular to despised, making her eventual death (shot by Trubel) at least tolerable if not celebratable.

Sorry NG, Juliette was possibly her future daughter in law not just an acquaintance for her to mistrust. In addition, they had established a rapport and trust by collaborating in the kidnapping of Diana and through emails. Juliette and Kelly had a great relationship that was well established. That is how they managed the "trust build-up" by the lack of MEM being unavailable to be on set.
Don't fall down the rabbit hole when someone makes remarks that were plainly un-attentative when they were watching the screen instead of what was on the screen.
The rabbit hole of BS was that G&K thought they could get viewers to believe Juliette could make the Grimm Extraordinaire a gullible ninny. They should have had Bud take on Z and kill him bare handed if they think we would fall for that BS.
