For them to get married, there would need to be complete honesty between them. This is why Juliette turned down the first marriage proposal because she knew he was hiding something. Although there weren't any more secrets between them, I feel like Nick was hiding from Juliette who he had become as a person, someone who'd go above and beyond the call of duty while she wanted some peace back in their lives. This is a consequence of his life as a Grimm. He can't escape it and she wants nothing more to do with it. I think she almost said as much while he only voiced his true feelings to Monroe.
