Nick never seemed to have any issue with Adalind masquerading as Juliette or with the fact that she took his grimm powers away from him. If he takes sex lightly and Juliette's merely a girl toy, I can see this reaction. However, if he looks at sex as part of his overall love for Juliette, then his reaction doesn't make sense.
Once I stopped being a male pig/slut, and had a meaningful relationship and meaningful sex (i.e. deep emotional quotient), I never really backslide from that. And frankly I don't know any guys who did either in terms of people they felt they had a relationship with that extended beyond a one night stand. In other words, once it registers that there really can be more to sex then getting off, it tends to be transformative in terms of how you conduct future serous relationships.
Cut to Nick. When Adalind offered herself to Nick after baby Kelly was born, Nick knew she was not going for a casual thing, yet his demeanor coupled with his conversation with Monroe, and other things reveal Nick did not take it as a substantive act, Nick was just getting off.
What that tells me is he never connected with Juliette sexually at more than the physical level. Otherwise, he would have treated that encounter with Adalind differently. He should not have had sex with her and simply opted for a non-sexual form of expression if he gave a damn about her. It was pretty obvious she was offering up sex in order to gain affection. Adalind clearly wanted Nick's affection not his male organ in her at that point. Frankly I think it was pretty callous of him to engage in sex under those circumstances. His disposition toward Adalind indicates Nick never matures beyond mere physical pleasure during sex with Juliette or he would have been more sensitive toward Adalind.
That is my opinion.
