Actually this is giving the writers to much credit. They did not think it though that far. As far as the story goes Adalind sleep with Nick now she has his child. They never intended to come up with a logical explanation. Because of that if they wanted to change it to Juliette child or even half Adalind and half Juliette's child, they could. Simply because they wrote in the body swap.
Rosalee thought it was not possible using this spell to switch moms and told that to Juliette.

Women characters do not have to be having sex with the lead to be important to the story.
