Based on what I have seen on the show, I would see the reactions of Grimm and Wessen as learned, not instinct. Consider the turtle people--they did not know Grimms, and therefore did not fear them-bad learning curve. The Dragon Girl did not fear Nick, she was more amused. Most Portland wessen had heard of Grimms, and were afraid of Nick at first. Nick learned through the books to be careful around certain wessen and not others. Truble did not kill on instinct, but only when attacked. After the from event, it would be a parent's/grandparent's duty to tell their children about how dangerous Grimms were-one killed 20(or was it 40-50-60 as the story was told and retold) armed wessen all by himself with no bruises.
