Eve is Juliette in permanent battle mode. What makes Eve is her ability to block any and all distractions. In the restaurant nothing NIck said or did distracted her from what she was their for. Even in the final fight Eve never changed her perspective on the situation. While the others where getting more frustrated. Eve was focused on what comes next. While Trubel broke down over meisner, Eve stayed focused. It was not till after Eve got stabbed with the glass. That she reflected back on what had happen and what went wrong. Even with feelings back I don't see that change when she is in Eve mode. I do think they will use her being Eve when she employees her interrogation techniques. Or when she kills. But having the Juleitte back lets her turn it off and interact with the others. To become part of their drama.
