I always thought Juliette's character was very flat particularly in the first season and she didn't really have a role in any of the plot besides being Nick's girlfriend. Her character sort of became interesting towards the end of season one and going into season two but then she started getting annoying with the whole romance/lustful charade with Sean Renard. I also didn't like the way she acted when she found out Nick was a Grimm and asked everyone to woge for her. In season three, she was kind of interesting when she was helping a zombie Nick. In season four, I thought it was cool to see her as a hexenbiest. It was surprising to see her so cold hearted considering how caring and loving she was in the seasons before. But in season five, Adalind said to Rosalee how she didn't like herself when she was a hexenbiest so I'm wondering if the personality shift is just apart of being a hexenbiest. Honestly I didn't really like Juliette's character but considering she has made it through four seasons, I thought it was really random that the show all of a sudden decided to kill her off. I wouldn't mind Juliette staying dead but considering this is Grimm and at the start of season five we don't really know what happened to her body anything is possible. It would definitely be a real plot twist if she wasn't actually dead.
