One option that you have is to make a copy of the Grimm forum, export it and rename it, and then re-import it. Then, just make a couple of changes to the theme settings in the admin control panel. You can then make either theme optional for anyone, and we can each have our cake and eat it, too.

It's not hard to do, although if you haven't much experience with MyBB themes, then it might seem a tad more complicated than it really is.

I understand how myBB themes work, but at the moment, I don't want to maintain two different themes, unless there is a demand for it. Currently i'm working on a handful of projects at Grimm Forum, and I prefer not to take my time away from them. I think the default theme will work for people that want black text on light background for now. This issue has never been brought up before, so if more people request an alternative theme, then I will implement one.
