Monroe in the same conversation said when we woge your eyes change... they go dark... it is like looking into infinate darkness... we see ourselves for what we are... etc.
It has been consistant though out Grimm that they only react after they woge in front of him. How many times has he had to interrupt their fear reaction after they woge in the middle of a conversation to say something like "relax, I am not like that. I want to help"
Even Hanks high school friend, and Juliette's college roommate had to be told he was a Grimm, because they were not paying attention to Nick when they woged.
As to Trubel, we will never learn about how she plays it after picking up a few more life skills unless they bring her back or spin the series off. I think most fans would object to both with her. I would be in the minority that would like to see one or the other. I would like to see a spin off with plenty of back and forth between them. Not shows that start on one and end on the other just phone calls and cast guest appearances. I hate the start on one and finish on the other because it messes up syndicated showings. It is hard to get the rights to both and keep them in sync.
I for one would watch the spin off in this case to see the growth of the character. She idolized Nick, now that she no longer is right there would she put him on a pedestal as an unachievable high and try to reach it or would she say to trash it all I will just do it my way take heads first and ask questions later. Only to have it come back to bite her. One Blutbad she killed was an off duty or under cover cop or something. A few shows later the Fochsbau she killed sever episodes back turns out to be just a local high school wide receiver who happened to show up at the wrong place at the wrong time to talk to the bad guy she was after. Say they were cousins and he was trying to straighten the families bad seed out and bring him back into the fold. Now the whole community is looking for blood.
Since the character is not even twenty yet she is still trying to feel her way through life now she has found that she has a gift but little idea exactly what she wants to do with it. She just knows she has to do something. They could have her personality all over the place for a while and still say it is consistent with feeling her way through life.
