I think they're keeping the super-hearing and the post-Zombie effects in reserve. There was no plot reason to bring them in.
As for Sebastian's death, he chose to do so because he felt guilty about betraying the others--even under torture. I agree that shooting the vehicle was wasteful--he could have removed the distributor cap and thrown it into the woods, or cut the serpentine belt or lots of other things. Which would have meant he'd have had enough bullets for the Prince.
I'm glad that the cure for Umkippen wasn't as easy as Rosalee's brewing up some potion; that would have been a bit of a copout.
