Nick didn't respond to Adalind's ILY by claiming he loved her back because at the time, he wasn't sure he did. That was appropriate in my book, at least he didn't lie unnecessarily about how deeply he felt for her.
Saying ILY back because he believed Adalind was being truthful and not because he genuinely felt the same is honestly the strangest thing I've ever read as an appropriate response to someone saying I love you first. Han Solo's "I know" makes better sense than saying "I love you too" if all it is, is a confirmation of belief that the first confession of love is legit.
