Know what? I've thought on this since my first post to this topic. I know I said I couldn't choose, but I have. My decision:
Hank.
Think about it.
He is human. He is an ordinary guy. No superpowers. Just working with what he has. He can't see Wesen unless they reveal themselves fully to him. He has fought Wesen hand-to-hand, people who by all rights usually have the advantage in physical combat. Not only that, but Nick kept all this Grimm & Wesen stuff from him for a while; he even let Hank think he was going crazy -- a terrible thing to do to someone who is more than just a friend but also a partner. So that means that the person Hank was trusting with his life on the job didn't trust him for a long stretch of time.
And yet he still keeps going. Takes it in stride and does his job. Goes beyond that and fights monsters on the side. Monsters he can't see. He doesn't have the advantages of Monroe or Nick. He's risking his life twice over, in both his day job and his side job. And doesn't have resentment toward Nick. Loads of loyalty instead.
That is amazing.
