In some cases I believe you are correct. If I recall correctly, the Grimms wiped out a species of wesen by overkilling. However, I don't believe that's a statement that applies to all Grimms. It would make no sense for Grimms to compile diaries to describe wesen in detail and document their attributes if they simply killed wesen because they are wesen.
It makes sense from the standpoint of knowing the strengths and weaknesses of your enemy. The Grimms of old would want their descendants to be as prepared as possible to combat any individual wesen.
Other than killing wesen, a primary reason to compile all of this info on various wesen is to prevent their descendants from being killed. There would be a lot more dead Grimms, including Nick, if they went into battle without knowing anything about their opponent. It would be a good idea even if it were just for self-defense alone.
