As far as whether Hexenbiest can or can't use their powers on Grimms it was proven they can when Bonoparte used his Magic on Nick. Or when Henritta used her powers on Nick. Or when Juilette used her powers on Nick. Or when Diana used her powers on Nick.
As far as Adalind vs Nick and her not using her powers there are two things to take into consideration:
1. More than likely the writers hadn't decided Hexenbiest would have active abilities outside of potion making.
2. Adalind was told not to kill Nick by Renard. Thus all she wanted to do was smack him around a bit.
Although all in all it is really number 1.
3. Maybe Adalind already had a crush on Nick too. Even after she loses her powers her idea of revenge was hurting Juliette. Other than taking Nick's powers, Adalind never tries to hurt Nick directly again.
Women characters do not have to be having sex with the lead to be important to the story.
