I think the show is having anyone continue calling her Eve for the same reason they dress down Adalind when with Nick. It’s less intrusive than a big sign over their heads.
I hate how IMO G&K writes like he feels a women has to be dependent on a man to love him and want to be with him. IMO he has done this to both Adalind and Juliette/Eve.
Women characters do not have to be having sex with the lead to be important to the story.
