The primary reason for Adalind taking the path she did was because she lost her powers. She told Nick he had taken everything from her and she was like everybody else. She may have come off as human in that scene, but it was clearly a state she wanted to rid herself of. Otherwise she would have left and gone somewhere to live out her human days. Instead she headed for Austria to steal another hexenbiest.
I'm going to add part of my previous post here since it fits better.
There may be a con in the works here with regard to Adalind. She is acting the good wife and good person and I hope she stays that way. But there have been some hints that the hexenbiest within her is alive and well. Despite what she told Rosalee, she has not taken any steps to permanently change herself into fully human. Needless to say, for all of the hoopla about Diana's powers, we saw Adalind put them to the test first by sending a message to Nick.
