Nick expected them to work things out. She was adamant that it would never work. Juliette broke up with Nick with or without the ring on her finger. The script posted by NG shows Juliette's state of mind regarding the possible engagement, had she accepted his proposal earlier, she would have rejected a possible future with the Grimm. It should be noted that Juliette mocked Nick about a Grimm being together with her, a hexenbiest, in a similar way Renard mocked Nick being with Adalind. Juliette and Renard didn't believe it was possible to put aside not just centuries of animosity but the bad history between Nick and Adalind but they proved them wrong. If you want something badly enough you won't let anything stand in your way. Juliette no longer wanted a life with Nick. The harder Nick fought to hold on to Juliette, the worse things got between them. He turned to Adalind for help, who was the straw that broke the back for Juliette and her life with Nick and that's why it was no issue for her to betray Kelly to Kenneth. You know the Adalind question on this is good, hadn't thought that by using Adalind potion would be seen by Juliette as something else against Nick.
