The last Chance would have been in the police Station.
Mary: Juliette left Nick because he wanted to much. He wanted the traditional marriage and wanted to be grimm and as part of that is they are a little uncomfortable with wesen specifically biests. Nick was always trying to "fix" Juliette/Eve to fit these views until the end of the show. When Juliette left and wanted time to learn about being a hexenbiest Nick was calling constantly. Henrietta had told Nick to stay away for a time so Juliette could learn about being a hexenbiest.

wiki: She then told him that killing Juliette would be the only way to stop her, or he could accept her as a Hexenbiest like she accepted him being a Grimm. Henrietta then advised Nick to keep his distance from Juliette while she figures out her current situation. :wiki
Nick had to protect the baby at the police because babies are innocent and of course was Diana re-kidnapped later with help from Juliette. When Juliette burned the trailer why did Nick not send someone to watch his house. If I were Nick I would be afraid of that burning down. By the time team grimm was giving Juliette the potion they should have given her the option of staying a hexenbiest to her and not just fixing her.
If Nick really wanted to he could have someone else to take Adalind for the moment and he could have talked alone in a differently room or in the same place with Juliette.
Sure, the Baby is innocent - but do you belief if Juliette really wanted to do anything everyone there would be able to stop her? That's why I think she would not do anything to Adalind
