The show made to much of a fuss to explicitly eliminate the idea of Grimm blood working on Eve. The idea was brought up several times and answered. But more then that changing Eve back would send the show in reverse. It is more likely Nick will move to be more like Eve and Trubel. Then Eve will return to being more like Nick. You can not keep adding more power into the show and then take it away.
Also the show use to be from a human perspective. Now that everyone knows they are in OZ. The show almost forgets that humans are the norm and wesen are the exception. When Hank told Wu this is the new normal, I guess that was for us too. In the first couple of seasons. Hexenbiest where like other wesen they had strength and could woge. When they decided to give Nick super hearing in the sandman. They let the magic genie out of the bottle. In season three they introduce telekinesis. From there it was all bets off. Powers got stronger. Even crazy powers where introduced, like Elizabeth freezing the room. Now we have Eve an example of the writer starting to abuse this magic concept they introduced with Nick's super hearing in sandman.
