Adalind didn't deny it, she glossed over it with "what does that have to do with anything" or something similar. Adalind was driven by her emotions since her introduction. It's the main reason Renard always came out on top while Adalind was always rushing to the next point of safety. Renard didn't allow his emotions to get in the way, while Adalind allowed her emotions to lead her to bad decisions. Whether the emotion at a particular time was love or hate, it's still an emotion clouding her judgement.
And considering that Adalind commented at least twice that she never wanted to be like her mother, becoming human with a law degree should have been her ticket out of the life she had with her mother and Renard. But Adalind's emotions prevented her from making a smart choice that would garner a healthy and prosperous lifestyle. Even when she's supposedly in love and Nick and dedicated to their relationship, she accepts a job with a firm that only wants her if she's a Hexenbiest. Again, sensibility dictates that she would walk away from a firm that wanted to utilize her Hexenbiest skills and go with a firm that doesn't know what she is. But Adalind did exactly opposite of what she should have done if in pursuit of as normal a life as possible.
